Welcome to my site! I’ll be sharing recipes and stories and likely some general lamenting over what a pain living a corn-free life can be. But in all seriousness, when I learned of my corn allergy it was very overwhelming. It seems living a gluten-free, nut-free, soy-free or even dairy-free life would be easier because those allergies have the benefit of the food labels straight-up telling you you cannot eat this food. With corn, you get to minor in chemistry with all these fun names:
- Corn syrup or high fructose corn syrup
- Dextrins
- Maltodextrins
- Dextrose
- Fructose or crystalline fructose
- Hydrol, treacle
- Ethanol
- Free fatty acids
- Maize
- Zein
- Sorbitol
- Citric Acid
- Corn flour, cornmeal. corn gluten, cornflakes, etc.
- Cornstarch, also listed on labels as starch or vegetable starch
- Corn oil
You have to learn that you can’t have distilled vinegar but you can have apple cider, white wine, balsamic and red wine vinegar in its place. You can’t have vanilla extract but you can make your own!
The bottom line: being corn-free isn’t an impossible task. It requires planning ahead and substitutions and discipline. But, here, together- we’ll get through it. You’ll eat better and you’ll feel better and you now have a place for general lamenting. Let’s get corn-free!
